After a way too long hiatus, we finally have our Vitamix back in action. We bought the blender nearly three years ago and literally ran it into the ground. Because (unfortunately) we’re the type of people who take months to address issues that involve going to the post office, we lived without the Vitamix for longer than I want to admit here. But once we sent it back, it was back on our doorstep within 9 days! Can you believe that? Great service, I tell you.

I’ve had this “Pistachio Ice Cream” Kale Shake bookmarked for about a year. I had completely forgotten about it, until I saw it again when I was cleaning up my bookmarks (another thing that takes me forever to get around to). All I have to say is I’m so dang happy with this recipe. When I asked the kids if they wanted one they were both hesitant, traumatized after that other yucky misfortune, but then I hollered, “It tastes like ice cream!” And they both came running. The best part – It really does taste like ice cream! But it’s made with kale! And it’s raw and vegan to boot.

“Pistachio Ice Cream” Kale Shake
1/2 cup filtered water
1/2 cup raw cashews (soaked for 1-2 hours)
1 cup curly green kale leaves
2 medium ripe frozen bananas
1/3 cup chopped, pitted dates
1/2 teaspoon vanilla extract
1/2 teaspoon finely minced ginger
pinch of Celtic or Himalayan salt
1 1/2 cups ice
Place all of the ingredients into your blender in the order listed and process until smooth and creamy.
