We love to try the recipes that our Hip Hop brethren share with us. Too often we try the recipes and never get around to sharing what we thought of it. It’s time to change that!
This recipe comes from one of my favorite artists, LMNO. As he shared with us recently, LMNO follows a strictly plant-based diet and believes that food fuels the mind, body and soul. With recipes as clean and delicious as this, you don’t need any meat!
It never occurred to me that olives could be roasted, but daaang! I was pleasantly surprised. So happy was I that I never bothered to spoon the finished product into a serving bowl. I ate my portion, and then ate another.
I love it when you can eat an entire recipe all by yourself and feel the opposite of guilty.

Oven Roasted Olives & Broccoli

Ingredients:
6-10 garlic cloves
about a 1/4 cup extra-virgin olive oil
2 1/2 lbs. broccoli (washed, drained & patted dry)
1 cup mixed unpitted olives
1/2 of a lemon
sea salt & cracked pepper to liking
Method:
Preheat oven to 425 and line a baking sheet with parchment paper.
Cut broccoli florets into desired size. Peel and slice garlic cloves in half.
Arrange the garlic, broccoli and olives on the baking sheet and season with desired amount of salt and pepper. Drizzle with the olive oil and toss to coat.
Bake for 20 minutes. Allow to cool for 5 minutes, then drizzle with lemon juice.
